A recipe of traditional breakfast in Colombia.

Name  of recipe: "Changua".

Let me tell you a few things about this dish. This is a very common or traditional in the breakfast in Bogota, Colombia. In other places too, of course, with a little differences for cooking.

In English we can think telling it "soup", but in my city or Spanish language is more like: broth. This recipe is my way to cook it. If you ask for this broth in your breakfast you won't need any other food during morning or until your lunch. Maybe you will feel full until 1 or 2 pm. I think. If you like onion and garlic, milk, eggs, go ahead. Enjoy our trip.

  • Ingredients:  
  1. This ingredients  and plan of action are for two people.
  2. Onion. It's up to you, how much you like in a broth. The same for next point. I prefer put a good amount of onion and garlic, I love them.
  3. Garlic
  4. Salt
  5. Water
  6. Milk
  7. Eggs
  8. Cilantro 
  9. Croutons: This is the closest bread to the used in my city for this plate.
    You can find in the market a Caesar Croutons, Garlic Croutons, Romano Cheese Croutons, Sweet Butter Cornbread Croutons. It's up to you too. Of course Garlic Croutons are my favorites. 

I found this kind of bread similar to the bread I like use for cooking this recipe in my country.

  • Plan of action:
  1. Cut the onion and garlic. I like cutting it very small pieces. Put it in a pot with half cup of water on the stove.

  2. Add two or three cups of milk. The more whole, the better.  If you have any problem with lactose, then change it by lactose-free milk. 

  3. Did you turn on the burner? 0k! Great!!

  4. Other people prefer put same amount of water and milk. It's up to you.

  5. I prefer one cup of water and three cups of milk. Let's continue.

  6. Add one mocha/coffee-spoon of salt. 

  7. Wait until the mix are boiling. Be careful putting low fire because, you know, it can spill.

  8. Add the eggs very carefully into the water-milk boiling, without permit yolk break it.

  9. Leave on the fire boiling two minutes. If you like yolk well cooked like a stone, then let it three more minutes with half flame.

  10. Prepare the dishes with croutons and cilantro cut it in very tiny size. Serve the broth, normally I put two eggs for each person.

  11. Add a little bit more salt on eggs if you want. Take care, is very hot. 

  12. Enjoy it.
